This is a list of books and learning materials I recommend and which I will expand over time. Some will be interesting mainly to pilots and those who want to become one, some will be interesting to everyone.
Fate is the Hunter: The finest book on aviation ever written

This one is a real gem. Definitely my favourite book about aviation, I read it at least once a year. Ernie Gann is sharing some great stories from his life as an early airline pilot in this autobiographic piece. Starting his career in the 1930s and learning the ropes and how to survive on the domestic lines in the USA, he takes you on his journey through WW2, flying freight all over the world and being a part in the development of transcontinental flying. While this is a highly entertaining book also for non-flying folks, I do recommend it to pilots of all levels of experience. It humbles us and reminds us to keep learning and to not become complacent, especially nowadays with all the automation and technology at our fingertips in a modern cockpit.
Stick And Rudder

Another great piece, I dare to say this one is mandatory to have if you consider yourself being a pilot. Herr Langewiesche explains why airplanes fly by putting his focus on the most important thing there is. It is called angle of attack, and its importance is nowadays often overlooked in modern, civilian flight training.
This one was written already in 1944, but is as good as it was back then. It is still in print nowadays, 23 years after the author passed, so I think this speaks for itself.
